Apple, Celery, Walnut and Avocado Salad

Ingredients (Serves 4)

2 ripe avocados, peeled, stoned and sliced

2 sticks of celery, sliced

1 Dessert apple, cored and cubed

4 tbsp of walnuts

2 tbsp French dressing

Method

Chop the ingredients into cubes and then quickly cover with the French dressing to prevent the apple and the avocado from going brown. Serve and eat immediately.

  1. Crisp and fresh with a slight zing, only to be contrasted with the warm earthiness of toasted walnuts – this salad is perfect. My only change was to cut back on the olive oil which I saw to no detriment whatsoever. Highly recommended!
